Because of this there is a huge underground water source in our valley. Grapes are, by far, the most arid adapted crop currently being commercially grown in Arizona (several times less water use that citrus, alfalfa and cotton) as many varietals originated in the middle east. So...I is this sustainable? As an ecologist (my previous career), I feel sustainability is a very elusive concept. Do I (we) hold ideals of sustainability? Absolutely. Could I go on for hours about this subject?
